Sa Qi Ma (Manchu Steamed Bun)

Introduction:
Sa Qi Ma used to be a Manchu bobo (cake). Though this name is a Manchu language, it is recognized and popular among customers. Originally, Sa Qi Ma was an important contribution in Manchu and then became popular among other nationalities. It was a household food and appeared various occasions like wedding dinner and even funeral dining.

萨其马为北京著名京式四季糕点之一。具有色泽米黄,口感酥松绵软,香甜可口,桂花蜂蜜香味浓郁的特色。
《燕京岁时记》中写道:“萨其马乃满洲饽饽,以冰糖、奶油合白面为之,形如糯米,用不灰木烘炉烤熟,遂成方块,甜腻可食。”道光二十八年的《马神庙糖饼行行规碑》中写道“乃旗民僧道所必用。喜筵桌张,凡冠婚丧祭而不可无”。正明斋制作的最为有名。
制作方法:鸡蛋加水搅打均匀,加入面粉,揉成面团。面团静置半小时后,用刀切成薄片,再切成小细条,筛掉浮面;花生油烧至120℃,放入细条面,炸至黄白色时捞出沥净油;将砂糖和水放入锅中烧开,加入饴糖、蜂蜜和桂花熬制到117℃左右,可用手指拔出单丝即可。将炸好的细条面拌上一层糖浆;框内铺上一层芝麻仁,将面条倒入木框铺平,撒上一些果料,然后用刀切成型,晾凉即成。
